Does anyone have a recipe that closely approximates the famous
Fuller's Walnut Cake? Also, descriptions of the texture and
composition and flavour would be very much appreciated.

I remember Fuller's Walnut cake very well. My great-aunt used to serv
it to her lady friends when they came for tea in Ireland, so Fuller'
was available there as well.

It was a dense cake with small pieces of walnut in it. You could tast
the eggs and butter in the cake. The icing between the layers was soft
with more walnut pieces - again, a lot of butter. The icing over th
cake was different - a sugary icing that crunched when you bit into it
It was a light brown color - a cafe au lait shade. The contras
between the soft interior and the crunchy topping was heaven.

Oh, and on the top of the cake there was a circle of half walnut
pressed into the hard frosting. Each slice got one half walnut. I'v
been searching for the recipe online too, and what did I find? zilch.

Oh, and they had a similar chocolate cake with chocolate buttons on th
top instead of the walnuts.

The day that Fuller's closed - in 1975, I believe it was - was a sad
sad day
